Elver Eels

During the spring Elver fishing season, and as regulations permit, Stoney Island Fisheries (2022) Limited procures Elver Eels, to be shipped live to Asian markets for the food industry. 







Anquilla rostrata, or the American Eel, is a fish known for mass migration.  They live in estuaries along the atlantic coast but migrate to the Sargasso Sea in the Atlantic Ocean to spawn. 

When the eggs hatch, the baby eels move into rivers along the North Atlantic Coast where they stay until they're old enough to spawn.

These eels have a long slender body covered in minute scales, which are covered in a mucus layer, making the eel look slimy. 

Also known as baby American Eels or Glass Eels, Elvers are Canada's most valuable fish species by weight and are shipped live to Asian markets that then grow these eels to maturity where they are sold for food. 

Small and translucent, these baby eels are less than 10 cm long and weigh just a few grams when they are harvested.  They are bought and sold by the kilogram.








Fished at night from rivers along the coast of Nova Scotia, the eels are harvested in the spring as they are returning from their spawning areas in the Atlantic Ocean.  This usually occurs from late March to early April.

Eels are shipped via air under controlled conditions to maintain lower mortality rates.

The elver fishing season is highly monitored and regulated and so this product is available only during this brief elver fishing season, and some years not at all, due to fishery shut down caused by poaching.  Please check with us for information on availability.
